Ingredients

For the chicken

  • 2 pounds boneless chicken thighs, butterflied flat (with the skin)
  • 1-2 tbsp Your favorite chicken seasoning blend

For the Bang Bang Sauce

  • 1 cup mayonnaise
  • 1/2 cup sweet chili sauce
  • 1-2 tbsp sriracha sauce
  • 1 tbsp honey

Optional Toppings

  • chopped green onions
  • sesame seeds

Instructions

Step 1: Prepare the Chicken

  • Cut your chicken into butterflied flat filets and season generously with your favorite chicken seasoning blend. (We keep the skin on, you can get boneless skinless or get bone-in skin-on and debone them).
For the best flavor, make sure every piece is evenly coated before cooking.

Step 2: Make the Bang Bang Sauce

  • Preheat your Blackstone griddle (or grill or cast iron pan) over medium-high heat.
  • Add a little oil to the cooking surface, then place the seasoned chicken onto the griddle.

Step 3: Cook the Chicken on the Blackstone

  • Cook the chicken, flipping occasionally, until it is cooked through and has a beautiful crispy crust on the skin and outside. The chicken should reach an internal temperature of 165°F.
  • While the chicken is cooking, mix together the mayonnaise, sweet chili sauce, and sriracha until smooth and creamy.
  • Adjust the spice level by adding more or less sriracha depending on your preference.

Step 4: Combine and Serve

  • Once the chicken is fully cooked, remove it from the Blackstone and toss it with the Bang Bang sauce until evenly coated.
  • Top with green onions or sesame seeds if desired.
  • Serve warm over rice, alongside your favorite vegetables, or enjoy it on its own!

Notes

What to Serve with Blackstone Bang Bang Chicken

  • White rice or jasmine rice
  • Fried rice
  • Roasted vegetables
  • Stir-fried vegetables
  • Asian-inspired cucumber salad
  • Lettuce wraps

Tips for the Best Blackstone Bang Bang Chicken

  • Cut the chicken butterflied flat or into similar-sized pieces so everything cooks evenly.
  • Don't overcrowd the griddle—give the chicken room to sear.
  • Add the sauce after cooking to keep the flavors fresh and creamy.
  • Start with less sriracha and add more if you prefer extra heat.
  • For extra flavor, let the seasoned chicken rest for 15–30 minutes before cooking.

Storage and Reheating

Store leftover chicken in an airtight container in the refrigerator for up to 3 days.
For best results, reheat the chicken on the Blackstone, stovetop, or air fryer before adding a little extra sauce.
